Zucchini and feta muffins
It is zucchini season!! Yuka said it.
Yuka is an app than scans and analyzes labels in the blink of an eye so you can learn at a glance which products are good for you and which ones you should avoid. It also tells you which fruits/vegetables are in season. Quite useful and convenient.
Today we have a simple and inexpensive dish that I frequently cook in the evenings for dinners with a soup: feta and zucchini muffins.
They’re moist, fluffy, and filled with nutmeg and rosemary flavour. They’re good/healthy for you! You can also replace the flour with wholemeal flour to make it even healthier.
Zucchini and feta muffins

Ingredients
- 1 tsp Olive oil
- 1 tbsp Rosemary
- Salt
- Ground pepper
- 150 gr Milk
- Nutmeg
- 1 Egg
- 75 gr Feta
- 200 gr Zucchini
- 180 gr Flour
- 1 tsp Baking powder
Instructions
- Preheat oven to 200°C
- Oil a muffin mould and sprinkle with 1 tbsp flour
- Wash and grate the zucchini. Cut the feta cheese into small cubes
- Beat the egg with the milk
- Season with salt, pepper, nutmeg and rosemary
- Stir in flour and baking powder. Finish with the zucchini and feta cheese and mix well
- Spread the mixture in the mold and put it in the oven for 30-35 minutes. Let cool before unmolding
