Vegetarian ‘meatballs’

Ok, so this recipe is literally my go to. It is both easy and tasty and if you are not vegetarian, you can serve those with meat. I prefer to have them with hummus and how lucky are you: I already posted my recipe of hummus.

This recipe was actually inspired by my aunt and cousin because they literally make the best vegetarian recipes in the whole world!!! (I am not kidding)

These ‘meatballs’ are very comforting and fun to eat with friends for an aperitivo, so what are you waiting for?

Vegetarian meatballs – zucchini, onion and curry

Ingredients

  • 1 Zucchini
  • 1 Onion
  • 80 gr Oat
  • 30 gr Shredded cheese
  • 2 Eggs
  • Parsley
  • 2 tsp Curry powder
  • 1 clove Garlic
  • Olive oil
  • Black pepper
  • Salt

Instructions

  • Peel and finely chop the onion and put it in a hot pan with a little olive oil. Remove from the heat once the onions have caramelized and set aside
  • Wash and grate the zucchini, and peel and crush the garlic clove. Chop the parsley coarsely. Combine the oats with the grated zucchini, squeezed garlic, and chopped parsley
  • In a small bowl, beat the two eggs with a fork. Once the mixture is homogeneous, add the curry powder, grated cheese and onion
  • Mix everything in a bowl. Set aside in the refrigerator for 45 minutes
  • In your hand, shape into balls. Crush well in the palm of your hand to remove excess liquid and to have a balls that hold together
  • In a heated pan with a little oil, brown them. Turn them over until they are golden brown on all sides
