Tofu Pad Thai

Pad Thai is a rice noodle dish with stir-fry, chicken or tofu with peanuts, and a scrambled egg. The ingredients are mixed in a wok with a tasty pad thai sauce. It is traditional street food in Thailand and one of Thai restaurants’ most popular menu items.

And… of course, I love Thai food, it’s colourful, tasty and different from what we eat in France, but every time I ordered Pad Thai in restaurants here, there were always too much noodles and not enough vegetables or tofu, so I decided to make my own.

Since I made my first attempt at pad thai, my boyfriend keeps asking me to make it again because it was delicious. Also, people usually think it’s not easy to cook, so you should take advantage of this situation to impress them.

This recipe is easy and if you have no idea what to do with the sauces you bought to make this recipe, I encourage you to make my gyoza since they require almost the same sauces lol.

I decided to use tofu but you can easily substitute it with chicken or shrimp. You can also add bean sprouts. They are usually found in Pad Thai but I decided not to use them because I don’t really like them. Finally, on the picture I used wheat noodles because I couldn’t find rice noodles this time 🙁

Tofu Pad Thai

Ingredients

  • 4 servings Rice noodle Servings are usually indicated on the package
  • 400 gr Tofu
  • 2 Eggs
  • 1 Red bell pepper Colour does not matter but I find it visually nicer
  • 2 Carrots
  • 1/2 cup Non salted peanuts
  • 1 glove Garlic
  • 1 Onion
  • Parsley
  • Lime juice
  • Olive oil

Sauce

  • 2 tbsp Peanut butter
  • 3 tbsp Vinegar for sushis
  • 1 tbsp Sriracha hot sauce
  • 3 tbsp Brown sugar
  • 1 tbsp Soy sauce

Instructions

  • Heat olive oil in a saucepan over medium-high heat.
  • Add the chopped onion and thinly sliced carrots. Then, add 1/4 cup of water to help carrots cook better. Add sliced bell pepper and minced garlic.
  • Cook noodles according to package instructions.
  • Mix the sauce ingredients together.
  • When the vegetables are almost cooked add the tofu. Season with salt, pepper and some lime juice.
  • Push everything to one side of the pan. Add a little more oil and add the beaten eggs. Scramble the eggs. Mix the eggs with the rest.
  • Add the noodles and sauce to the pan and mix well. Also add half the peanuts and parsley.
