The Best Blueberry Pie
I love to eat pies! I mean it, I could eat pie every day, they literally are my favorite dessert! When I feel down: I eat pie, when I feel good: I eat pie…. in short I always have a good reason to eat pies and to share them with my friends. I’m like a missionary except that I preach for the pies. I’ve already taken all my friends to my favourite coffee shop in Toronto where they can enjoy delicious pies.
Now let’s get down to business. The fundamental element of a pie is its dough. if the dough is not good then I’m sorry to tell you but the pie cannot be good. The dough makes the pie. For this pie, we will use a very easy to make homemade shortcrust pastry.
What makes this pie better is the filling. Unlike most blueberry pies you can find in bakeries in France (i.e with custard), this one has an almond filling.

Blueberry Pie
Ingredients
Shortcrust Pastry
- 1 Egg
- 250 gr Flour
- 125 gr Granulated sugar
- 1/8 tsp Salt
- 100 gr Soft butter
- 1 tsp Lemon juice
Filling
- 2 Eggs
- 100 gr Granulated Sugar
- 100 gr Almond powder
- 80 gr Melted butter
- 1 tsp Vanilla extract
- 250 gr Blueberries Frozen
- 30 gr Flaked almonds
Instructions
Shortcrust Pastry
- In a bowl, mix the egg with the sugar and the salt
- Put the flour in another bowl
- Make a hole in the middle of the flour bowl and add the contents of the other bowl along with the lemon juice and melted butter
- Mix the dough until homogeneous
- Spread it in a pie dish and put it in the fridge while you prepare the filling
Filling
- Preheat the oven to 180c or 355f
- In a bowl, mix together and in order, eggs, sugar, almond powder, butter and vanilla
- Spread the blueberries on the shortcrust pastry
- Cover the blueberries with the mixture
- Arrange the flaked almonds on the surface of the pie and bake for 35 minutes
