Sugar-Free Pancakes
It was about time I posted my first pancake recipe on my site because Pancakes & CyberSecurity without pancakes… something was missing. Especially since pancakes are after pies, my favorite meal.
On Sunday mornings, I am one of those people who like to eat comforting breakfasts that are not too complicated to make. So I make pancakes quite often. However, mid-April, I decided to embark on a 30-day sugar-free challenge. The principle is simple: eliminate sugar from your diet. So I had to rethink my pancake recipe to fit this challenge.
I simply replaced sugar with vanilla and cinnamon to give my pancakes a nice taste, and honestly, they were very good. I replaced the maple syrup with frozen fruit (raspberries and blueberries) thawed in the microwave and added banana pieces. The gamble paid off as I was able to enjoy my famous pancakes without the addition of any sugar.
I also replaced milk with soy milk.
Sugar-Free Pancakes
Ingredients
- 2 cups Flour
- 4 tsp Baking powder
- 1/4 tsp Baking soda
- 1/2 tsp Salt
- 1 + 3/4 cup Milk
- 60 gr Butter
- 2 tsp Vanilla extract
- 1 Egg
- 3 tsp Cinnamon
Instructions
- In a mixing bowl, combine the flour, baking powder, baking soda, cinnamon, and salt. Make a well in the middle of the mixture and add the milk, slightly cooled melted butter, vanilla extract, and egg
- Mix together until smooth
- Heat a nonstick pan over low-medium heat with a little butter to lightly grease it. Pour 1/4 cup of batter onto the skillet and gently spread it out into a round shape
- Turn the dough over with a spatula when the bottom is golden and bubbles emerge on the top, and bake until golden
