Good evening!!

This week’s recipe is a kaiserschmarrn, which is my favorite dish to have when I go skiing in the Austrian Alps.

But first, let me tell you what kaiserschmarrn is. It is a slightly sweet pancake named after Austrian Emperor Franz Joseph I, who enjoyed this type of fluffy shredded pancake. It’s usually served as a dessert or as a light meal. But I usually eat it for brunch on Sundays. 🙂

It is a popular dish in Austria, Bavaria, and several former Austro-Hungarian empire countries, including Hungary, Slovenia, and northern Croatia.

I recommend that you try it since it is incredibly simple to make and absolutely wonderful. Don’t forget to sprinkle with sugar and raisins, and serve with apple purée on the side. The apple purée adds a touch of freshness to this warm meal.

Ingredients

  • 250 ml Milk
  • 150 gr Flour
  • Salt
  • 30 gr Sugar
  • Butter
  • 4 Eggs
  • Vanilla extract

Instructions

  • In a bowl, mix the milk, flour, salt, egg yolks and vanilla extract.
  • In a second bowl, beat the egg whites with the sugar until stiff.
  • Mix the contents of the two bowls together.
  • Melt the butter in the frying pan and cook the mixture as if it were a pancake (as the amount of preparation obtained is large, I advise you to cook the preparation in two stages).
  • Break the resulting "pancake" with a fork or cut it with a knife and serve while still warm or lukewarm, sprinkled with icing sugar and raisins and accompanied with apple sauce.
