Avocado/Fried Chicken Burger
First post, first recipe. I am very excited to start this new adventure and share my recipes with you!!!
A little bit about me: I love burgers, I could eat burgers every week…. wait… that’s actually what I do. But lately I got tired of my traditional recipe. So, two weeks ago when I was preparing the menu for the week and looking in my fridge to see what I had left from the week, I had the idea to make a different burger, one that would combine the freshness of the avocado with the crispness of breaded chicken. This burger is all you need: it is healthy thanks to the vegetables but still very tasty thanks to the chicken.
For those of you who are vegetarians, the chicken can be replaced by a portobello mushroom cooked schnitzel style (i.e. with breading). I’ve tried it before and it’s just as good.
This recipe is easy and can be modified to suit your taste. Feel free to change the vegetables.
Avocado/Fried Chicken Burger
Ingredients
- 2 Buns
Fried Chicken
- 1 Chicken breast
- 1 Egg
- 75 gr Cornflakes sugar free
- 1 tsp Honey
- 1 tsp Mustard
- 1/8 tsp Paprika powder
- 1/8 tsp Salt
- 1/8 tsp Pepper
Avocado Spread
- 1 Avocado
- 1 tsp Lemon juice
- 1/4 tsp Paprika powder
- 1/8 tsp pepper
- 1/8 tsp salt
Toppings
- 1 Yellow bell pepper
- 50 gr Cheddar cheese
- 1 Yellow onion
Instructions
Fried Chicken
- Preheat oven to 180c or 360f
- Cut the chicken breast into 2 pieces
- Prepare 2 bowls: one with the egg beaten with honey and mustard and the other with the crushed corn flakes and salt and pepper
- Dip the chicken in the egg mixture and roll it in the cornflakes
- Place on a baking sheet lined with baking paper
- Bake for 15 minutes
Toppings
- Cut the bell pepper and onion
- Heat a pan over medium heat with olive oil
- Put them to cook for about ten minutes
Avocado Spread
- Mash the avocado in a bowl
- Add lemon juice, salt, pepper and paprika
- Set aside
Burger Assembly
- Heat the buns in the oven with the chicken for 5 minutes to get them crisp and warm
- Melt the cheddar cheese in the microwave
- Spread the avocado on the bottom of the bun
- Add the peppers and grilled onions
- Add the fried chicken
- Spread the cheddar cheese on the top of the bun
- Assemble the burger and enjoy
